I always forget how cathartic it is

making marmaladethe scrubbing, weighing, poaching, seiving, squeezing, measuring, stirring. . . oh, the stirring!I found some tiny tangerines and thought they'd make great marmalade with the oranges and lemons and limes I had left over from Christmas. . . at the moment I'm still waiting for the sugar crystals to dissolve before I start the three hour long roiling boil - smells fantastic already!

Yes, it's a magical time, with the whole house smelling of fresh marmalade boiling. J. makes all ours, at first from fresh Seville oranges, but now from Mamade. I hope yours sets exactly as it ought to with a fine skin puckering just as it should on the testing saucer, and that your efforts bring delight all round.

(Horatio is partial to good marmalade, did you know? Home-made is best, if not Frank Cooper's Oxford.)

I just read on Mel's site that you don't have any birds...did I read that correctly? How can that be?

Even if you were living on a rock in my Harbour, you'd at least have seagulls and cormorants. Move here as soon as you can and you can sell your wonderful marmalade at our Farmer's market.

Love the site's combo of the 'hominess' of making marmalade with all the books on the shelf. I can smell the orange as I snuggle into a big comfy chair with a blanket.

I only eat sugar-free marmalade. (By that I mean that the only marmalade that I eat is sugar-free; I do have other items in my diet.) I say this not to create a debate about the consumption of sugar, but rather to save you the worry of having to dash round here with a freshly prepared jar of your fine conserve.
I hope that this helps.

souldip a few years ago now, when I had birds in a garden, I used to sell homemade chutnies, jams and marmamalades, amongst other handcrafted items
